Ingredients (12 bars):
1 + 1/2 cups Rice cereal1 cup Rolled oats
1/2 cup Chopped nuts
2tbsp Ground Flaxseed/Linseed
1/2 cup Natural peanut butter
1/3 cup Maple syrup or agave nectar
1 tsp Vanilla extract
1tsp Cinnamon
Recipe:
1. In a large bowl combine the oats, rice cereal, chopped nuts, cinnamon and ground flaxseed.
2. Poor the peanut butter and maple syrup into a saucepan and heat gently until smoothly combined, add the vanilla extract.
3. Poor the wet mixture over the dry and mix throughly using a wooden spoon or your hands if you don't mind getting messy!
4. Line a deep baking tray or dish with baking paper (ideal size is 20cm squared) press the mixture down flat using your fingers, lay another baking sheet on top and press down firmly again. Place the tray in the refrigerator for a few hours to set, placing a heavy book on top will help.
5. Once set I topped mine with 70% dark chocolate, simply melt the chocolate and poor over the bars before returning to the refrigerator for a few hours to set!
6. Once everything is set, chop that slab of goodness into bars and enjoy!
